The best results can only be achieved by starting with the best ingredients. That’s why we buy nothing but the finest fruits – grown in the best locations, perfectly ripened, and lovingly harvested.
FROM OUR REGION.
From the seeds to the purchase of the fruits: the majority of most of our fruits are sourced locally, right here in our own region. Our cherries, elderberries and wild quinces come from growers in the Lower Main region who have worked with us for decades. We know that purchasing wild fruits is a matter of trust. Experienced pickers carefully harvest our fruit varieties, for example, wild cherries, Mirabelle plums, quinces, wild plums, sloes, and elderberries, at locations known only to them. These exceptional fruits are then speedily delivered to our distillery.
PRECISELY THE RIGHT MOMENT.
The quality of the harvest depends on the right degree of ripeness. Our fruits are sorted by hand. Leaves, twigs, stems and pips are mechanically separated from the undamaged fruits. The pure fruit pulps are then further processed into noble distillates.
In some instances, our distillers introduce add the stones of the fruit into the fermentation process to achieve an even richer, more full-bodied aroma. We work exclusively with the traditional fermentation method. The mash ferments in special agitator tanks. Scrupulously controlled conditions in these tanks enable us to keep the unique flavours of these excellent fruits perfectly in balance, around the clock.
